Shinobu Kato brews sake in the time honored tradition of the Japanese brew master or ‘toji.’ He opened his brewery after working in software engineering at Nissan in Nashville and at Softbank in Tokyo, his hometown.
Like engineering and car manufacturing, sake production requires quality inputs, attention to process, and of course, appreciative customers.
‘sake works’ will cover the basics of production and consumption of Japan’s national beverage.
To join in a toast with your own sake, two brands of sake that are similar to those brewed by Shinobu Kato (his are not yet available in Michigan) are: Kubota Senju Ginjo '1000 Long Lives” and Suigei “Drunken Whale” Tokubetsu Junmai.
